CASHEW BEEF WITH SNOWPEAS 
2 T vegetable oil
6-7 c beef stock (canned or homemade)
2-3 lbs. lean beef or sirloin tips, cubed
1/2 c soy sauce
1 c celery
1 c onion
1 c bell pepper
1 c carrots
1 pkg snowpeas

Brown cubed beef in the oil in a large casserole or dutch oven. Add soy sauce and broth and bring to a boil. Reduce heat and simmer covered for 20-30 minutes. If you like a thicker sauce, mix 1/2 cup cornstarch to 1/3 cup cold water and stir into beef, cook for about 5 minutes. Meanwhile, in a large skillet over medium heat, melt 1/4 cup butter and add celery, pepper, onion and carrots, cook until vegetables are tender. Add snowpeas and warm through-add vegetables to the beef mixture. Serve over fried rice topped with 1 cup sliced, toasted cashews.
