SPICED PUMPKIN WAFFLES 
1 1/2 cups all-purpose flour
3 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. ground ginger
1 pinch salt
2 eggs
1/4 cup firmly packed brown sugar
1 can pumpkin puree
1 2/3 cups milk
4 tbsp. (1/2 stick) melted butter

In a large bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

In a second large bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.

Gently fold in the flour mixture to the liquid mixture; gently mix until all ingredients are combined thoroughly, but don't overmix.

Cook according to your waffle iron directions until a deep, golden brown.
