BABY BLINTZES 
2 loaves white bread
1 stick butter
1 c. sugar
1 tsp. cinnamon
8 oz. cream cheese
1 egg yolk
1/3 to 1/2 c. sugar

Trim crust from bread and flatten with a rolling pin. Melt butter in a separate dish. Mix together 1 cup sugar and cinnamon in another dish. Mix together thoroughly cream cheese, egg yolk and 1/3 to 1/2 cup sugar. Spread cream cheese mixture on each slice of bread, then roll it up individually like a jelly roll. Cut in half or bite sized pieces (about 1/4 inch). Dip each piece in melted butter. Roll buttered piece in cinnamon/sugar mixture. Bake 10 to 15 minutes at 350 degrees.
