HANDHELD HEART ATTACK BREAKFAST
SANDWICH
 
I use the big multigrain breads, which need at least two of everything to fill properly. You can save on calories with a standard loaf, and just use one egg per sandwich.

A non-stick pan in good condition is required for picture perfect results. If I'm using any other kind of pan, my eggs look like I let the chicken walk through them!

PER SANDWICH:

2 eggs
2 slices bread
2 slices cheese
butter
a nonstick frying pan, in good condition

Toss a gobbet of butter into a pan on medium heat. Coat pan bottom evenly. I do this by picking the pan up and swirling it about. When appropriate heat is reached, crack eggs into butter. When eggs have solidified sufficiently, swirl them about, too. Think of it as aerobic cooking! Flip carefully, allow reverse to solidify, and swirl about some more.

When appropriate temperature is achieved, remove eggs to plate in center of cooktop to keep warm. Toss another gobbet of butter in, swirl about, and place slices of bread, flat sides together, in pan. Swirl about! Be sure to soak up all that buttery goodness! Watch the heat carefully, as it is easy to burn the bread. If presentation is important, remember - you have another side.

When bread is grilled sufficiently, remove briefly to egg plate while you toss another gobbet of butter in and... swirl it about! Replace the bread and... swirl it about! Place cheese slices on bread and allow to melt. Place eggs on cheese, place top crust on eggs, and serve! A well-balanced breakfast!

If you're feeling decadent, add thick slices of sweet onion, vegetables, or cold cuts.
