BAKED LEMON PUDDING 
2 tbsp. butter
2/3 c. sugar
2 eggs, separated
2 tbsp. flour
1/2 c. lemon juice
2 tbsp. lemon rind, grated
1/8 tsp. salt
1 c. milk

Cream butter and sugar. Add egg yolks. Beat. Add flour, lemon juice, rind and salt. Mix. Add milk. Beat egg whites and carefully fold into mixture. Bake in buttered custard cups in pan of hot water at 350 degrees for 30 to 40 minutes.
