BROWN SUGAR PEANUT BRITTLE 
1 c. granulated sugar
1 c. packed brown sugar
1 c. light corn syrup
1/2 c. water
1/2 tsp. salt
1/4 c. butter
2-3 c. raw peanuts
1 1/2 tsp. baking soda

Butter 2 (15x10x1 inch) pans; set aside. In iron skillet combine the sugars, corn syrup, water and salt. Cook and stir until the sugars dissolve. Continue cooking until mixture boils; stir in butter.

Continue cooking without stirring to 230 degrees (thread stage). Cook and stir to 280 degrees (soft crack stage). Stir in peanuts. Cook, stirring constantly, to 300 degrees (hard crack stage). Remove from heat. Quickly stir in soda, mixing well.

Pour into buttered pans, spreading to cover the surface of the pans. Cool completely. Break apart when cooled. Makes 2 pounds.
