HALUPKI (Stuffed Cabbage) | |
2 1/2 lbs. ground beef, sirloin 1 lg. onion, chopped 2 eggs 1/2 tsp. salt 3 dashes black pepper 1/4 lb. fried bacon, crumbled 1/2 c. rice (heat rice to a boil, let stand until cool, drain, set aside) 1 lg. head cabbage 2 sm. cans tomato sauce 2 tbsp. vinegar or lemon juice Steam cabbage in large pot with about 2 inches water until leaves are easy to remove. Do not let water cook out. Trim thick areas of leaves. Mix meat, onion, eggs, salt and pepper in large bowl. Use a fork so mixture stays loose. Add cooled crumbled bacon and cooked strained rice. Mix with a fork. Roll about 2 tablespoons of mixture into cabbage leaf. Fold ends in and lay seam side down in a large pot. Continue until leaves are too small. If any mixture is left, make into patties and add to pot. Mix tomato sauce and vinegar or lemon juice and pour over top. Cook slowly for about 1 1/2 hours. |
