TUNA CHOP SUEY 
1/2 c. melted butter
1/2 c. sliced mushrooms
1/4 c. sliced onions
6 tbsp. flour
2 1/2 c. milk
2 tbsp. soy sauce
1 1/2 c. chopped celery
1/2 c. chopped green peppers
1 (7 oz.) can tuna
1 can meatless chow mein
2 cans chow mein noodles

Cook the chopped celery and green pepper in a little boiling water until tender. Set aside. Melt butter in skillet; add the mushrooms and onions and cook until the onion is transparent. DO NOT BROWN. Blend in flour and add milk, soy sauce. Stir constantly until sauce is smooth and thickened. Add the can of tuna, celery, green pepper and chow mein. Heat to serving temperature and serve over heated noodles.
