HOPPIN' JOHN 
2 c. cooked southern peas or black-eyed peas
3 slices bacon
1 med. onion, sliced
1 c. raw rice
2 c. water

Cook bacon until almost done; add onion and cook until onions are tender. Mix cooked peas, rice and bacon-onion mixture with 2 cups water. Cook in double boiler for an hour, or until rice is done. To do this without bacon, cook onion until soft in a little oil and put 1 vegetable cube in the water.
