DATE NUT PINWHEELS 
1 lb. chopped pitted dates
1/2 c. water
1/2 c. sugar
1 c. butter
1 c. brown sugar
1 c. sugar
2 eggs, well beaten
1 tsp. vanilla
4 c. flour (all-purpose)
1 tsp. baking soda
1 tsp. salt
1 c. chopped pecans

Cook dates, water, sugar until thick, stirring constantly (set aside). Cream butter, brown sugar and 1 cup white sugar. Add eggs and vanilla. Sift together flour, soda, salt, add to mixture, stir until smooth and chill.

Divide dough in half, roll each half on lightly floured surface until 1/4 inch thick. Combine date mixture and 1 cup chopped pecans. Spread half over each piece of dough. Roll each like a jelly roll with open edge on bottom. Wrap in waxed paper and chill overnight. Cut in 1/4 inch slices. Bake lightly greased pan 8-10 minutes in 400 degree oven. Makes 8 dozen.
