EGGPLANT CASSEROLE | |
1 eggplant, cooked 1/2 lb. ground beef 3 sticks celery 5 garlic toes 1 lg. onion 1 bell pepper 2 eggs 1 can tomatoes, drained 1 can mushroom soup 1 tsp. salt Cook onion and celery with eggplant in water. Mix in other ingredients. Top with 1 cup buttered crackers. Bake at 325 degrees for 45 minutes to 1 hour. |
