PICADILLO 
1 1/2 lbs. ground chuck or ground round
1 sm. yellow onion, minced very fine
1/2 green pepper, minced very fine
1/2 c. green or black olives, finely chopped
1/2 - 1 c. raisins (white or black)
12 oz. tomato sauce
2-3 tbsp. ground cumin (camino), it's a spice
Salt, pepper, oregano & garlic powder to taste
10 oz. pkg. yellow Spanish rice (I prefer Vigo brand)

1. Brown meat well and drain thoroughly. The meat should be in small crumbly pieces, about the size of a green pea.

2. Add all spices.

3. Add onion and pepper and saute until soft.

4. Add rest of ingredients and simmer 15 to 30 minutes until tender, serving over yellow rice. Serves 4 to 5.
