THIMBLE COOKIES 
1/2 c. butter
1/2 c. light brown sugar, packed
1 egg
1 1/2 c. all-purpose flour
Dash of salt
1 egg white, slightly beaten
1 c. finely chopped nuts
1 c. jelly

Beat butter with sugar until smooth and creamy. Add egg and beat until light and fluffy, then beat in flour and salt. Flour hands and roll dough into 1-inch balls. Dip balls into beaten egg white, then in nuts.

Place cookies 2 inches apart on greased cookie sheets. With thimble or thumb, make depressions in center of each cookie. Bake at 350 degrees for 10 to 12 minutes, or until lightly browned. Fill center with jelly just before serving. Can use any kind of jelly.
