HARDY HAMBURGER SOUP | |
2 tbsp. butter 1 c. chopped onion 1 c. sliced carrots 1/2 c. chopped green pepper 1 lb. hamburger 2 c. tomato juice 1 c. diced potatoes 1 1/2 tsp. salt 1/8 tsp. pepper 4 c. milk 1/3 c. flour 3 tbsp. brown sugar Melt butter in large saucepan. Add onions, carrots and green peppers. Cook until onion is tender, but not brown. Add hamburger and cook until meat is crumbly. Stir in tomato juice, potatoes and seasonings. Cover and cook over low heat until vegetables are tender, about 20-25 minutes. Combine flour with 1 cup of the milk. Stir into the soup mixture. Add remaining milk and heat. Do not allow to boil. |
