SALSA 
6-10 lbs. ripe tomatoes
1 lb. onions (2 lg.)
1 lb. green peppers (2 lg.)
1 lg. red pepper
1 1/2 c. white vinegar
1 tbsp. + 1 tsp. coarse salt
2 tsp. dry mustard powder
2 tsp. sugar
2 tsp. chili powder
1 tsp. garlic powder
3/4 tsp. cumin
1/2 tsp. pepper
1/8 tsp. crushed red pepper flakes (more if you like it hot)

Peel and chop tomatoes, allow to drain in colander. Chop onions and peppers. Add rest of ingredients. Bring to boil and simmer until desired consistency.

To process-hot water bath for 20 minutes.
