200+ PUMPKIN PIES 
4 c. cooked pumpkin, may use canned
4 tsp. cinnamon
1 tsp. ginger
1 tsp. nutmeg
1 tsp. allspice
1/2 tsp. salt
2 c. sugar
4 eggs
2 c. milk
2 c. cream or half and half
3 unbaked 9 inch pie shells

May use pumpkin pie spice instead of ginger, nutmeg, and allspice.

Combine pumpkin, spices, and salt in large bowl; mix well. Blend in sugar; add eggs, one at a time, beating well after each. Stir in milk and cream; mix well. Spoon into shells. Bake at 375 degrees for 45-60 minutes or until a sharp knife can be inserted in center and comes out clean.
