CARROT RELISH 
3 qt. ground carrots
5 large green peppers
1 large red pepper
6 onions
1/4 tsp. red cayenne pepper
2 tbsp. celery seed
3 heaping c. sugar
2 scant tbsp. salt
6 c. vinegar

Boil 1 hour and pack in jars and seal.
