ITALIAN EGGS 
2 green peppers
3 peeled potatoes
1 onion
1 can stewed tomatoes
1 sm. can tomato sauce
4 eggs

Cut up peppers and slice potatoes and sliced onion in nice size frying pan. Cook until soft. Add stewed tomatoes and tomato sauce.

Makes 4 small holes and crack egg and place in holes like you were frying them. Cover with lid until eggs are done. Make sure you have Italian read to eat with this dish. Delicious.
