SALMON CAKES 
2 lbs. salmon
3 eggs
1/2 c. chopped onion
Seasoned Italian bread crumbs

Boil salmon until it flakes. Drain, flake salmon (like tuna). Let it cool. Add 3 eggs, 1/2 cup chopped onion and bread crumbs until the mixture can be packed into cakes. Form cakes and dip into a beaten egg, roll in bread crumbs. Fry until golden brown.
