KAREN'S GOURMET SALMON CAKES 
1 can of salmon drained and well mashed
1 egg, well beaten
2 c. mashed pinto or kidney beans
1 c. finely chopped onion
Flour enough to bind ingredients together
1 c. grated Colby cheese
1/2 c. salted sunflower seeds

Mix together salmon, egg, beans, onion and flour well. Separate into rolled balls and press flat on a hot skillet over medium heat, on the top side pressed into cakes. Sprinkle sunflower seeds, when flipped over sprinkle grated cheese when almost done and cheese is melted. Serve hot.
