2 c. sifted flour 1 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 1 c. shortening 1 c. sugar 1 c. brown sugar, packed 2 eggs 1 tsp. vanilla 1 c. flaked coconut 1 c. chopped pecans Sift together flour, baking soda, baking powder and salt; set aside. Cream together shortening, sugar and brown sugar in bowl until light and fluffy. Blend in vanilla. Beat in eggs. Gradually stir in dry ingredients into cream mixture, blending well. Stir in coconut and pecans. Drop mixture by rounded teaspoonfuls about 3 inches apart on ungreased baking sheets. Bake in preheated 375 degree oven for 10 minutes or until golden brown. Makes 6 dozen. |
