CRUNCHY CARROT BALLS 
1 (3 oz.) pkg. cream cheese
1/2 c. shredded cheddar cheese (2 oz.)
1 tsp. honey
1 c. finely shredded carrot
1/3-1/2 c. Grape Nuts cereal
2 tbsp. finely snipped parsley

In medium size bowl, beat cream cheese, cheddar cheese and honey together until blended. Stir in shredded carrot. Cover and chill 30 minutes. Shape into 14, 1" balls, cover and chill. Just before serving, roll balls in mixture of cereal and parsley, pressing into cheese to coat. Makes 14 balls.
