TEXAS CAVIAR | |
4 c. canned black-eyed peas, drained (cheap brand is fine) 1 can Rotel tomatoes & green chilies 1/2 onion, chopped 1 clove garlic 1/2 lb. Old English cheese (Velveeta is fine) 1/4 lb. or 1/2 c. butter or bacon drippings (I use less but prefer bacon drippings) Blend in blender first 5 ingredients until smooth. Heat all in pot until smooth and cheese is melted. Serve hot with tortilla chips. My family loves this to the side or poured over just about any Mexican food like taquitos or tamales. |
