LEMON BARS 
CRUST:

1 cup (2 sticks) butter, softened
2 cups all-purpose flour
1/2 cup confectioners' sugar

FILLING:

2 cups granulated sugar
4 tbsp. all-purpose flour
1 tsp. baking powder
4 eggs
6 tbsp. lemon juice and grated rind

Preheat oven to 350°F.

Blend butter, 2 cups flour and confectioners' sugar (I use a pastry cutter). Pat mixture into 9x13x2-inch baking pan sprayed with non-stick cooking spray (Pam).

Bake at 350°F for 15 minutes.

Meanwhile, sift sugar, 4 tablespoons flour and baking powder. Add eggs, lemon juice and rind. Blend well.

Pour and spread over baked crust.

Bake for 30 minutes more at 350°F. If custard seems loose, cook longer.

Cool and cut into squares. Dust with confectioners' sugar.
