APPLE COFFEE CAKE 
1 1/2 c. sugar
1/2 c. butter, softened
1 1/2 tsp. vanilla
1 1/2 c. sour cream
3 eggs
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
3 c. all purpose flour or whole wheat flour
3 med. apples, sliced or chopped

Heat oven to 350 degrees. Grease tube or rectangular pan. Beat sugar, butter, vanilla and eggs on medium speed, scraping bowl occasionally. Beat in flour, baking soda, baking powder, alternating with sour cream on low speed. If baking in rectangular pan, spread all the batter in pan. Place sliced apples on top of batter. Cover with streusel filling. Bake until wooden toothpick comes out clean, about 45 minutes to an hour.

If baking in a tube pan, place 1/3 of batter in pan. Then place 1/2 of the chopped apples on top of batter, cover with 1/3 of streusel filling. Repeat process 2 times, ending with streusel filling. Bake for about 1 hour or until wooden toothpick comes out clean.

STREUSEL FILLING:

1/3 c. brown sugar
1 tsp. cinnamon
1/3 c. chopped nuts
