JALAPENO CORNBREAD WITH GROUND
BEEF
 
1 c. yellow cornmeal
1 c. milk
2 eggs, beaten
3/4 tsp. salt
1/2 tsp. baking soda
1/2 c. vegetable oil
1 (17 oz.) can cream style corn
1 lb. ground beef (or pork)
1 lg. onion, chopped
1 lb. Cheddar cheese, grated
4-5 jalapeno peppers, canned, chopped

Preheat oven to 350.

Combine cornmeal, milk, eggs, salt, soda, oil and corn. Mix well and set aside.

Brown ground meat until crumbly and drain well on paper towels.

Pour half of the batter into a well greased baking dish that has been dusted with cornmeal. Sprinkle grated cheese over the batter and sprinkle meat on top of the cheese. Sprinkle chopped onion and jalapeno peppers over the meat.

Top with remaining corn bread mixture. Bake at 350 for 50 minutes or until done.

Serves 6-8.
