MEXICAN MAIN DISH | |
2 tbsp. shortening 1 lb. ground beef 1/2 lb. spaghetti noodles 2 med. chopped onions 1/2 c. water 1/2 c. corn 1 lg. can tomatoes with juice 1-3 tsp. chili powder 3 cloves garlic (minced) 1 tbsp. salt 1 tsp. pepper 1/2 lb. sliced Cheddar cheese Melt shortening. Brown noodles to a medium color. Add meat and cook. Add remaining ingredients except cheese. Press into liquid. Reduce temperature and simmer (covered) for 20 minutes. (Can freeze at this point.) Put a layer of cheese on top; cover and cook until melted (5-10 minutes). Serve with Mexican chips. Makes a large batch. May substitute ground turkey or chicken for a leaner meal. |
