NEW MEXICAN GREEN CHILI STEW 
2 lbs. lean beef round or pork
2 tbsp. oil
3 med. potatoes, peeled & diced
1/2 c. onion, sliced
1 lg. garlic clove, minced
2 tsp. salt
6 to 8 green chilies

Cube round steak, sprinkle with salt and fry until brown in oil. Add potatoes to browned meat together with onion, garlic, salt, chili and enough water to cover. Continue to add water if necessary. It should be of a soupy consistency. 4 servings.
