8 BEAN SOUP 
2 c. beans (1/4 c. each kidney, navy, yellow-eyed, black-eyed, pinto, lima, split pea, pink)
2 1/2 qts. water
2 tsp. salt
Sm. piece ham, ham bone, ham hock
2 tsp. cumin
1 lg. onion, chopped
29 oz. can tomatoes, chopped
3 tbsp. lemon juice
1 tsp. pepper

Soak beans overnight. Next day, drain and add water, salt and ham. Bring to boil. Simmer 2 to 3 hours. Stir occasionally. Add onion, cumin, tomatoes, lemon juice, pepper. Simmer 30 minutes. Correct seasonings, if necessary. Start with 1 teaspoon cumin, add more to taste. Serves 12. Freezes well. Tastes great with just kidney beans. Use your favorite.
