HUMMINGBIRD CAKE 
3 c. plain flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 1/2 c. Wesson oil
1 c. nuts
1 c. coconut
2 c. sugar
3 eggs, beaten
1 1/2 tsp. vanilla
1 c. mashed bananas
18 oz. can crushed pineapple, undrained

In a large mixing bowl, combine dry ingredients. Add eggs and oil, stir until moist. Do not beat, stir in vanilla, nuts, pineapple, coconut, and bananas. Spoon batter into 3 well greased cake pans. Bake at 350 degrees for 30 minutes.

FROSTING:

18 oz. pkg. cream cheese
1 box 10x sugar
1 c. coconut
1/2 c. butter
1/2 c. nuts
1 tsp. vanilla

Cream butter and cream cheese until fluffy. Add sugar and beat. Stir in vanilla. Let cake cool before frosting. Coconut and nuts on top.
