C.'S SZECHUAN CHICKEN | |
2 chicken breasts, boned & cut up 1 tbsp. cornstarch 1 garlic clove 1 tsp. crushed red pepper 1/2 c. cocktail peanuts 2 tbsp. sliced green onion 1. Combine chicken with 1 tablespoon cornstarch and 1 tablespoon soy sauce; set aside. 2 Make Sauce: 2 tablespoons soy sauce, 1 tablespoon sherry, 2 teaspoons minced ginger, 1 teaspoon each cornstarch, vinegar, sesame oil and sugar. 3. Stir fry chicken, pour off excess oil. 4. Add garlic, pepper and stir. 5. Add peanuts, green onions and stir. 6. Pour sauce over all and simmer until hot. 7. Serve over shredded lettuce. Peanut can be eliminated, substitute broccoli, etc. Recipe or sauce doubles well. |
