CHICKEN-BROCCOLI CASSEROLE 
1 box UNCLE BEN'S® original long-cooking wild rice
1 bag frozen broccoli or 1 bunch fresh broccoli
4 chicken breasts, cooked, skinned and boned

SAUCE:

2 cans cream of chicken soup
1 c. Miracle Whip
1 tsp. lemon juice
1/2 tsp. curry powder
1 c. grated Cheddar cheese

Bread crumbs for topping (optional)

Poach chicken approximately 20-30 minutes. Cook rice at the same time. Remove chicken to cool. Cook broccoli just a couple of minutes in the chicken broth.

Make sauce by combining the ingredients. Layer 9x13 inch pan with rice, half the sauce, cubed pieces of chicken, broccoli, balance of sauce. May top with bread crumbs, if desired. Bake at 350 degrees for 45-60 minutes.
