SPINACH STUFFED ZUCCHINI | |
3 sm. zucchini, about 1 lb. 10 oz. pkg. frozen spinach 2 tbsp. flour 1/2 c. milk 1/3 c. shredded Cheddar cheese 4 slices crisp fried bacon Trim zucchini. Cook whole in boiling water 10-12 minutes. Halve lengthwise. Scoop out centers. Chop centers. Cook spinach and drain well. Cook in saucepan: chopped zucchini, spinach, flour and milk. Cook until thick. Place zucchini shells in shallow baking dish, spoon in spinach mixture. Top with cheese and crumbled bacon. Bake 15-20 minutes at 350 degrees. Serves 6. |
