RUM BAKED PINEAPPLE 
1 med. pineapple
1 lg. orange, pared, cut into sm. pieces
1/4 c. brown sugar
2 tbsp. butter
2 tbsp. rum

Heat oven to 425 degrees. Do not remove top leaves from pineapple, cut thick slice from side of pineapple and set aside. Cut around edge of pineapple with curved knife being careful not to cut shell. Remove fruit from shell. Cut into bite-size pieces, discard core. Mix pineapple pieces, oranges, sugar, butter and rum. Pour into shell. Replace pineapple slice. Wrap pineapple leaves in heavy foil. Place pineapple on ungreased baking sheet. Bake until hot, about 40 minutes. Remove cut side from pineapple and serve.
