MITCH'S DUBLIN SHRIMP 
1 lb shrimp (cleaned)
1 pint heavy cream
4 tbs butter
1 cup sliced mushrooms
1/4 cup chopped scallion geens
1 shot Irish whiskey
2 tbs flour
salt
pepper
wild rice

In skillet, melt 2 tbs butter and sauté shrimp, mushrooms and scallions until cooked and then remove from pan and set aside.

In same skillet, melt additional butter. Add flour to make paste.

Slowly add cream and blend until smooth. Add Irish whiskey and season with salt and pepper.

Add shrimp, mushroom and onion mixture and let reduce a bit until sauce is thick.

Serve over wild rice.
