SHRIMP & OCTUPUS ESCABECHE 
2 lbs shrimp cooked shrimp, chopped
2 lbs octopus cooked and chopped
10 limes
1 bunch of fresh cilantro, minced
4 plum tomatoes, chopped
2 onions

Cook octopus in pressure cooker for 1 hour. When done, clean the octopus and chop into pieces. Cook shrimp and cut into small pieces.

Add minced cilantro, onions, and tomatoes.

Cut limes in half and squeeze lime onto mixture from all 10 limes.

Refrigerate for 2 hours.

Served best with fried green plantains or as a side dish.
