VEGETABLE PIE 
1 c. Mozzarella cheese
4 eggs
2 lg. zucchini squash, sliced
1 med. onion, sliced
1/2 tsp. seasoned salt
1/2 tsp. garlic salt
1/2 tsp. oregano
2 tbsp. butter
2 unbaked pie crusts
2 tomatoes, peeled and sliced
2 or 3 yellow squash, peeled and sliced
1 med. green pepper (seeded and sliced)

Price and cook pie crusts 5 minutes. Saute all vegetables in butter. Put seasoning in vegetables and mix. Put half vegetables in each crust. Beat 2 eggs for each pie and pour over vegetables.

Bake at 350 degrees for 15 minutes. Take out of oven and sprinkle lightly with Parmesan cheese. Then add 1/2 cup Mozzarella cheese on each pie. Return to oven and bake 15 minutes longer.
