BROCCOLI SOUP | |
6 slices bacon 1/2 onion, chopped 1/4 c. green pepper, chopped 3 c. broccoli, bite size pieces 1 c. chicken broth 1/4 c. butter 1/4 c. flour 1/4 tsp. pepper 2 1/2 c. milk 1/2 tsp. Worcestershire sauce 1 c. Swiss cheese, grated Cook bacon until crisp, set aside. Saute onions and pepper until soft. Add broccoli and broth. Simmer 5 minutes. In another pan, make a white sauce by melting butter, stir in flour and cook 1-2 minutes. Add milk, whisk until smooth. Cook 3-4 minutes until sauce is thickened and smooth. Add cheese, stir until melted but don't boil. Add cheese sauce to broccoli, stir until heated through. Serves 6. Serve with croutons. Very rich and creamy. |
