ROUND STEAK & VEGETABLE
CASSEROLE
 
2-3 lb. round steak, cut into pieces
2 tbsp. salad oil
2 lg. onions, sliced
2 c. sliced carrots
2 c. fresh mushrooms
1 med. green pepper
1/2 lb. fresh green beans, cut into pieces
3 med. tomatoes, sliced
1/2 c. uncooked reg. rice
2 tsp. salt
1 1/2 tsp. sweet basil
1/4 tsp. pepper
1 c. shredded cheese

Brown meat in oil. Arrange 1/3 of vegetables in a 4 quart casserole. Place half of the meat over vegetables and sprinkle with 1/3 rice and seasonings. Add another 1/3 of vegetables, the remaining meat, 1/3 seasonings and all of remaining rice. Top with remaining vegetables and seasonings.

Cover and bake 1 1/2 hours at 350 degrees or until meat is tender. Remove cover. Sprinkle cheese over top and return casserole to oven to melt cheese.

Makes about 6 to 8 servings.
