CHERRY CHEESE TARTS 
1 c. crushed vanilla wafers
1 (8 oz.) pkg. cream cheese
1/3 c. sugar
2 tsp. lemon juice
1/2 stick butter
1 egg
1/2 tsp. vanilla
1 can cherries (Thank You brand pie filling)

Melt butter, mix with wafer crumbs. Press into miniature papers in tin. (Just enough to fill bottom of paper.) Cream the cream cheese, egg, sugar, vanilla and lemon juice. Fill to the top of paper cups. They swell up during baking and then go down as they cool. Bake 20 to 25 minutes at 375 degrees. The tarts may be refrigerated or frozen. Makes 28 to 30 tarts.
