RUM CAKE 
1 stick melted butter
1 1/4 c. flour
1 c. sugar (2/3 brown and 1/3 white)
1 tsp. vanilla
1/4-1/2 bottle of rum extract
1 c. pecans (optional)
2 eggs
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 (4 3/4 oz.) strained baby food sweet potatoes
1 (8 1/2 oz.) can crushed pineapple, undrained

Melt butter, add flour, sugar and dry ingredients and eggs. Stir in sweet potatoes, pineapple, flavorings and pecans. Can be mixed and baked in same pan or mix and pour into greased Bundt pan. Bake at 350 degrees for 40-45 minutes. Test for doneness.
