SHISH KEBOB 
2 lg. onions, quartered
4 green bell peppers, cut each into 8 pieces
10-20 button mushrooms
1 lb. firm tofu, chopped into lg. 1-2 inch cubes
1 can chunk pineapple
10 cherry tomatoes
3 Japanese eggplant, peeled and cut into lg. 1-2 inch chunks

Marinate vegetable and fruit in a large bowl. Stir occasionally. Marinate tofu in a separate bowl. Marinate all ingredients several hours. Skewer ingredients on sticks alternating pieces. Broil or grill about 5 minutes each side. Serve over brown rice.

MARINADE FOR VEGETABLES:

1/2 c. lemon juice
1/2 c. tamari or soy sauce
2 cloves garlic, crushed
1/2 c. oil
2 tsp. grated fresh ginger

Marinade for tofu is the same as above, except the amount is halved.
