SHRIMP CREOLE 
1 lb. peeled raw shrimp (I used canned shrimp)
Onion
Sweet green bell pepper
Celery stalks
1/2 c. tomato puree
1/2 tsp. dried thyme
1/2 tsp. salt
1/2 c. c. stock (fish or chicken), or water
Sweet bell pepper
1 jalapeno pepper
Fresh tomato
1 tbsp. minced garlic
1 sm. bay leaf
Black pepper

Cut all vegetables into 1/2" dice. You will need 1 cup of diced onions, both peppers, celery and tomato. Saute the onion until lightly colored. Add sweet peppers and saute 2 minutes. Add jalapeno pepper and celery and saute 2 minutes. Add chopped tomato, puree, garlic, thyme, bay leaf, salt, pepper, stock or water and simmer for 30 minutes. Add shrimp. Cover and cook 7 minutes. Correct the seasoning. Serve with boiled rice.
