VANILLA CREAM PIE 
1 c. sugar
4 1/2 tbsp. cornstarch
1/2 tsp. salt
3 c. milk (can use skim)
3 egg yolks
1 tbsp. butter
2 tsp. vanilla

Make and bake pie shell (see pie crust recipe).

Combine sugar, cornstarch, salt, and mix well. Stir in milk and bring to a boil over medium heat, stirring at all times! Remove from heat when it starts to thicken. Stir 1/2 mixture into slightly beaten egg yolks (slowly) stirring as your pour.

Return to a boil and cook few more minutes until boiling. Stir constantly to avoid sticking. Remove from heat. Add butter and 2 teaspoons vanilla. Pour into pie shell and make meringue topping (see recipe) or top with whipped cream. With basic pie, can add bananas or coconut or other fruit.
