COWBOY STEW 
1 tbsp. butter
1 lb. lean ground meat
1 sm. onion, chopped
4 green onions, chopped (optional)
1/4 c. celery (optional)
1/4 c. bell pepper (optional)
1/2 clove garlic, minced
Salt and pepper to taste
1 tbsp. chili powder
1/4 tsp. sugar
1 (16 oz.) can tomatoes, chopped
1 (16 oz.) can whole corn
1 (32 oz.) can ranch style beans
2 or 3 med. potatoes, peeled and chopped
3 c. water

In a 5 or 6-quart Dutch oven melt butter; add ground beef and brown well. Add next 5 ingredients and saute in browned meat until soft. Add salt, pepper, chili powder, sugar, and stir in well. Add tomatoes, corn, beans, potatoes, and water.
