SWEET POTATO CASHEW BAKE 
6 med. sweet potatoes or 2 lb. can
1/2 c. packed brown sugar
1/3 c. broken cashews
1/4 tsp. ginger
1 (8 3/4 oz.) can peach slices
3 tbsp. butter

Drain potato juice from can. Combine brown sugar, cashews, ginger and 1/2 teaspoon salt (optional). Drain peaches well. In a 10 x 6 x 3 inch baking dish layer half of the sweet potatoes, peach slices, and brown sugar. Repeat layers. Dot with butter.

Bake covered for 30 minute at 350 degrees. Uncover and bake 10 minutes longer. Spoon brown sugar from bottom of pan before serving. Serves 6-8.
