1 3/4 c. prepared biscuit mix (Bisquick) 1/3 c. butter 1 c. rolled oats 1/4 c. sugar 1 egg, beaten 1/4 c. milk 1 tsp. vanilla Thick preserves, your choice Powdered sugar Put biscuit mix in bowl, cut in butter with pastry blender until mixture resembles coarse crumbs. Stir in oats and sugar. Combine egg, milk and vanilla; add to dry ingredients, stir just until moistened, turn dough onto lightly floured board, knead several times. Roll 1/2" thick and cut out 3" rounds with floured cookie cutter. Place on greased baking sheet. Press a deep indentation in center of each and fill each with 1 1/2 teaspoons preserves. Bake at 400 degrees until done and lightly browned, about 10 to 12 minutes. Sprinkle with confectioners' sugar while warm. Makes 12 rolls. Good for breakfast. |
