MUSSEL CHOWDER 
12 mussels, minced or chopped
1 onion, cut finely
1 c. water

WHITE SAUCE:

1 oz. butter
1 oz. flour
1 1/2 c. milk
Parsley
1 tbsp. vinegar
1 tbsp. white wine

Make up white sauce of butter, flour, milk, and parsley. Add vinegar and white wine. Simmer gently for 15 minutes. Serve with garlic bread, croutons, or crackers.

Serves 4.
