QUICK CHEESE PUFF 
3/4 c. milk
3 eggs, separated
2 slices white bread
1/2 tsp. dry mustard
2 tbsp. Wesson oil
6 tbsp. grated cheese
Pepper and salt to taste

Scald milk, add crumbled bread. Stir until smooth. Add oil; stir well; add cheese. Put mixture over boiling water (double boiler) for 5 minutes, stirring constantly. Remove from heat and stir in egg yolks. Add seasonings.

Fold in beaten egg whites. Pour into greased casserole. Bake in 475 degree oven for about 15 minutes until puffy. Serve at once. Serves 3 or 4 people.
