SKILLET SWISS STEAK | |
1/3 c. flour 2 tsp. salt 1/4 tsp. freshly ground pepper 2 lbs. of round steak (at least 1 inch thick) 3 tbsp. bacon drippings 1 chopped onion 1/4 c. chopped green peppers 1/4 c. of celery 1 #2 can of tomatoes 1 (8 oz.) can of tomato sauce Combine flour, salt and pepper and pound into the steak. Brown steak very slowly on both sides in hot bacon drippings. Remove steak and keep the steak warm. In the pan where the steak was, in the same bacon drippings, saute onion, green peppers, celery only until clear. Then add canned tomatoes and cook this mixture for another 5 minutes. Place the steak back into the pan with the sauce and cover with the tomato sauce. Cover the pan and cook slowly until tender, usually takes about an hour. You may have to add a small amount of water to keep your sauce from sticking to the pan. 6 servings. |
